Before we talk about flavour, we need to talk about purity. By law, the spirit only needs to be made with 51% Blue Agave to be labelled as “tequila.” The other 49% can be made up of cheap fillers like sugars or corn syrup.
These are called mixto tequilas, and they are most likely the culprit behind that famous headache after one too many cheap shots!
